if you pitch 3 concepts/mockups, take the one you like the least, and claim you spent the most effort on it, take the one you like the most, and make sure the client thinks you're not so into it, usually they will assert their own opinion which is contrary to what you seem to radiate...

Something I learned and started using myself while freelancing at an agency:
Only present concepts to a client that you like. If you show the client a concept that you're not happy with, chances are they will choose that one and you'll end up hating the project (and the client in time). If you only have one concept that you're happy with, show that one concept and sell it as the right concept.

It's really easy actually.
One your estimates just add 'additional concept' as a separate line item. I guarantee they wont want any additional concepts.

^ Actually I did that - and they paid for the addtl concepts. I guess I shouldn't be complaining because $$$...but somehow I'm always more pleased with the results of personal or 100% creative control projects.
I guess those might be called "art" instead of "client work" though.
