how do you get a client to sign a contract through email? have any of you done it? is it binding even though no signatures have been exchanged?

email is binding. its just a matter if it ever gets nasty. people could claim all sorts of things like my email was hacked. One email is not enough in cases where you might want to show proof. you will rely on proving the relationship along with correspondence leading to a contract email.
signature is best for contracts, I would weight the individual with how much $$ is at stake. small projects for me would be no problem. and also email sign offs on work are ok at times. etc. but I think signature is best. email is excepted in court disputes. just make sure you formulate it right if you go that route.

In the end, you can only enforce what you can afford to enforce. It's not like the police is going to go get your money, you'll have to lawyer up. If it's less than $10k (for example), you could get fucked regardless of the contract.

We just get them to print, scan and email back. Never been a problem or question in many, many years of doing this.
Some people have scans of their signatures and they just stick it in. Same thing.
As zark points out, in the end it comes down to resources. Best bet is always getting as much money as you can at the start and at milestones. If a new client has a problem with this, you should have a problem with them.

they ended up printing signing scanning and emailing but they also paypaled a deposit so i'm good to go

Wordup to deposits. If its a client I've never worked with before, i usually ask for 50-100% upfront. Same if it's a client who is notoriously late on paying invoices... next job is upfront payment or we dont even talk.
