So I bought a popular online company's '.co' domain name a while back. I would like to sell it to them, it is worth me sending them a cheeky email asking if they want it in exchange for cash? Or will their lawyers be all over me because I bought their trademark's .co domain name?

Domain trading is OK for generic names, this is cybersquatting.
If the domain keyword is a protected TM you are sure get a cease and desist letter, ordering you to pass the domain on to them.
Your offer will be used as a proof that you tried to profit from infringing their TM.
I would drop the domain, .co are useless, especially now with tens of new domain extensions coming soon.
