How much do Pantone colors in Illustrator differ on an iMac from an actual book?
Is there any place online to see colors more true to life?

calibrate your screen? imacs have pretty decent displays built in.

no RGB screen can produce all pantone colours true to life. Same with CMYK, you can't get a true cyan or magenta on screen.
just get it close and use a book for double checking. Keep your book in a drawer when your not using it. UV fades pigments (sun, monitor, CFL bulbs, halogens).

If you final product is print, then swatch book is the most accurate way to tell.
There's no way online (as far as i know) can show colour more true to life as web browser only supports sRGB colours. And PANTONE is... well PANTONE colours. Different type of colour medium system. One is additive colour and one is subtractive colour. Plus different paper stock display colour differently.Your best bet is to hire someone to colour calibrates your monitor (assuming you have a professional grade monitor). Or buy a "Pantone ColorMunki Design". Used it and loved it. It allows you to scan both monitor and print then generates a profile for each to have the closest to accurate colour possible. it supports PANTONE colour as well.
