That IS a bit weird.
I'm sure it doesn't, but the White-Text version definitely doesn't have a stroke applied?

Try printing to a different printer. This could help determine if it's something on your computer, or if it's the way your printer is reading the info. Upon first reading your question, my head went straight to the printer RIP getting confused and going overboard on a trap setting (or something).
Without seeing a screen grab of what you're seeing, particularly regarding the on-screen appearance, it's tough to diagnose. Back to the printing though, keep in mind when you're sending stuff to a printer, it's going to another computer...sometimes a deviant printer avoids the blame that gets heaped on a fine, upstanding CPU.
For the sake of experimentation, if the text floating above the color is still in editable format, print a variation with the type converted to outlines to see if there's a difference.

tried everything... phoned printer and he reckons it's just the trapping/RIP and should be fine on their side.
is there a way to edit your trapping settings in illy/ind?

Don't know off the top of my head, but inclined to say leave it to your printer following a consultation if you can. Since they're the folks that know how their equipment will perform, it may save you time in the long run. In the meantime, this post might be helpful (maybe?)
