err, sorry I dont know about these things.
I searched and couldnt find much on here and interwebs is just confusing me.I have 3gs, had it for ages but never unlocked it, want to do it now. is jailbreaking and unlocking ( so i can put different sim card in ) the same thing?
best way? and what does it mean? am i then illegal or something? is steve gonna slap my wrists?

Have you had it under contract for a while with T-Mobile? If so, I believe they are obligated to unlock it on customer request after a certain amount of time has passed on your contract. Best chat with them directly about it, but I do believe I remember hearing something to this effect.
- And by 'unlock', I mean SIM unlock.Continuity

I am with telus and I just broke it on my own. Works completely fine. If u fuck it up or do something wrong u can just restore it in iTunes

Google "gizmodo jailbreak 3gs" but go to an article from late 2010 to get the latest info. I know there was a big article on this not too long ago. I was going to do it to but was too lazy. Seemed super easy to do. (Think there's a site where all you do it click a button and then install Cydia, the app store for jailbroken phones)

on what firmware are you on? have you made all the updates from apple? this is the most important part. If you have 4.2.1 right now, there is no solution for you. If you are on 4.1, you're safe for Jailbreak and Unlock.

I was told that as soon as you unlock it and connect it to itunes, itunes sees the os as corrupt and restores automatically. Is this true?

You can even update your 3GS to the newest OS 4.2.1, jailbreak it with Redsn0w and then unlock it with Ultrasn0w.
