How many pieces of work should you show? 10 max? I'm struggling to cut it down

Just show your best. Don't fill it with stuff you're not pleased with to meet some number expectation.

Show a couple, then give the interviewer (or his partner) the folder so they can browse the rest while you talk about how awesome you are... Bring copies so you can let them keep it with your application.

Lillebo makes a great point. Let them browse and ask questions, letting your work drive the interview. Good luck.

Feature or show your best but bring as many as you can as backup, just in case they'd like to see something in particular.

As said.
It's good to also have a case study, if there one that you can show.
It probably won't be read in your interview but employers usually value when you can show a problem and its solution, and an evaluation of a successful outcome, other than just bad-ass looking stuff.
