I'm working on a site, and was requested that it can work on the ipad as well so unfortunately I probably shouldn't use flash.
So what should I use to create cool animations? HTML 5 or Jquery? Jquery seems easiest to learn? What's the breakdown on browsers that can support Jquery, and where's the link that has the percentages of browsers web surfers are using?

If it has to work on the iPad and common browsers your best option is look into jQuery.
But if it was iPhone/iPad only site you can look into CSS3 animations, but browser support on desktops isn't yet there available in all of them and will take a while.

I'd choose jQuery. It's intuitive and robust.

you can do more in css3 than jquery, but the canvas property/object isn't fully supported in all browsers... so jQuery is safest but not as flexible

it's not an either/or, if you use the canvas element, you still need javascript to do any animation within.
