unless you mean from above at which point i can say that government topographical/density maps are made by hand. i know a girl who does this work. her complaint when i asked why these maps can't be compiled from other maps... i was informed for government grade topographical maps you need government data. if you start mixing the sources the accuracy skews and populations and elevations can cross borders they shouldn't

i would make a topographical bump map and apply it to a plane in 3d software.
i'm having a hard time figuring out what you are going to do with 3d data in a 2d app like illustrator

In sketchup you can use the capture from google earth feature surely? Then Sandbox from that, or do something with the .kmz if you're clever.

Does anybody now a source and a way to get topographic map data (particularly of China) and use it in a vector program like Illy or even Sketchup?
