Asian Ginger Chicken Soup
5-6 chicken thighs bone in, skin on
1 2-3 inch piece of ginger root smashed
1 large tomato, chopped medium
1 medium onion sliced thin
4 celery ribs sliced thin
1 tsp garlic chopped
1 bay leaf
2 large potatoes chopped medium
2-3 carrots sliced medium
1 tsp salt
1 tsp pepperIn a large pot, add all the ingredients EXCEPT CHICKEN. Over a medium-high flame cook until onions soften, adding a pinch of salt. (about 3-5 minutes).
Add chicken, then fill with water enough to cover chicken, cover and bring up to a boil. Immediately reduce heat to medium/medium low and simmer for approximately 1 hr 15 - 1 hr 30 minutes.
Remove skin from chicken and enjoy.
- Alternate: get rid of the tomato, onion, bayleaf - add corn and creamed corn. Shred the chicken. Add lots more pepper.inteliboy

URAP URAP
Indonesian spicy coconut vegetable dish, make it as spicy or sweet as you want.
You can pretty much mix the spicy coconut with any vegetables you like.Ingredients:
8 oz fresh green beans
8 oz bean sprouts
4 carrots
1 can bamboo shoots
small cabbage
1 cup fresh grated coconut
1 small onion, finely chopped
1 tsp chilli sauce (sambal ulek)
1 tsp salt
2 tbsp lime juiceWash bean sprouts, pinching of any brown tail.
Pour boiling water over bean sprouts, then rinse under cold water tap.
Drain well.String beans and cut diagonally or bite-size lengths and cook in lightly salted water until just tender. Beans should still be crisp to bite.
Scrub carrot and cut into thin strips, cook until tender. Drain well.
Slice cabbage, discard the center stem.
Blanch in boiling salted water for a minute or two, until tender but not limp. Drain and refresh with cold water.
Cut bamboo shoots into strips the same size as the beans.
Place fresh grated coconut into a bowl, add onion, chili sauce, salt, lime juice and the shrimp paste which has been grilled for a few minutes, or heated in a dry frying pan.
Mix thoroughly together.
Sprinkle this grated coconut mixture over vegetables, reserving some to garnish the dish when served.Put vegetables in a steamer and steam for 5-8 minutes.
Put the steamed vegetables to a serving dish/platter and sprinkle with reserved grated coconut mixture.
Use as an accompaniment to a meal, or as a salad by itself.

Just cooked some nice salmon filets. With Quinoa Puffs mixed with cottage cheese and avocado. Seasoned the filets with herb butter. Yum.

Corned Beef slow cooker recipe is a great thing to make in celebration of St. Patrick's Day. Just put this in the crockpot before you leave tomorrow morning, and come home to a festive St. Patrick's Day meal. Enjoy this Corned Beef Slow Cooker recipe from About.com. It goes wonderfully with this Irish Soda Bread Recipe
Ingredients:
6 carrots. cut into chunks
2 onions, chopped
2-3 lb. corned beef brisket with seasoning packet
12 oz. can beer (non alcoholic is fine)
2 Tbsp. yellow mustard
1/4 cup brown sugar
1 cup water
8 wedges cabbage
Preparation:In 4-6 quart crockpot, combine carrots and onions. Rinse corned beef under cold running water and pat dry with paper towels. Place in crockpot and sprinkle with contents of seasoning mix. Pour beer over brisket and spread mustard on brisket. In small bowl mix brown sugar with water and pour over brisket. Cover crockpot and cook on low setting for 11-12 hours.
Remove corned beef from crockpot and cover with foil to keep warm. Add cabbage wedges to vegetables and liquid in crockpot. Cover crockpot and cook on high for additional 30-40 minutes or until cabbage is crisp tender.To serve, cut corned beef across grain into thin slices. Remove vegetables from slow cooker with slotted spoon and serve with corned beef. Serve cooking juices over the food, if desired. Offer additional mustard on the side. 8 servings

I reached peak burger-craving this weekend and folded, buying some fatty mince from the butcher, so I could try making 'smash burgers'.
It's been - according to the recipe thread here - 4 months since I last tried cooking beef at home, so I'm guessing my consumption of bovine flesh isn't a defining aspect of of my character. Anyway, sniping over.. ;)
'Smash burgers' are basically the zenith of my decades-long quest to make a decent burger at home.
I'd kind of already arrived roughly at the idea anyway, having travelled a long path of adding onions or flavourings, egg as a binder, etc – to just making basic-seasoned fat patties that I'd smush into the pan as I cooked them.
The secret to a good burger, as nefulekno is just Keeping It Simple, Stupid and good ingredients.
So, the following is probably my best median bet for making good burger at home...
My 'secret sauce' was a bit of a drunken abomination of the version in the video above, replacing 'relish' (which I don't really know what it is) with fine-cut gherkins and shallots (mild and sweet!) and small cubes of tomato.
I tasted it again today and whilst it's a bit sweet, fuck me it's good. So, on the menu again in an hour or so.
Oh, and because I don't have the right turner - mine's got large holes in it, I borrowed the technique I saw in the following video of flattening down with a small piece of baking paper...
The guy has a fucking great get-up. First response in the YT comments list is fucking golden - I highly recommend.
