Last one we designed and built used a 42" Samsung touchscreen, Dell computer inside and Flash interface (that was tied to the website, so we could update both). We designed a custom case and had it built by a craftsman/furniture builder - it is a free standing kiosk.
It was simply a website running locally and worked very well. Not cheap to get professional touchscreens at that size, but it worked very well.
It was also very easy to implement, overall.
