Also, in Illustrator, I can do Apple+1 to zoom to 100%. What is the hotkey for that in AE? It's bugging the hell out of me.

Use the Pan Behind Tool (Y) to move your anchor point on the PNG.
But it sounds like you need to fix your resolution or pixel aspect ration, that's probably why the sizing issue.
I think CMD and the + or - keys will zoom, other use the drop down in the work area.

Sweet, thanks for the tip on Pan Behind.
I've checked all my files, the original PNG that I imported as well as my composition sizes. Everything is set how I imagine it should be. Can't imagine what I'm overlooking.

If unsure, sometimes the easy fix simply grab your PNG in the imported file library in AE, and drag it to the new comp button. You'll need to change the actual frame size to what you desire, but AE will do the pixel ratio dealio for you.
- That will take you PNG and drop in in a new comp, based on the PNG's specsharlequino

did you crop the image in ps to the document size?
you can import with layer-size or document-size

If I have three layers on the timeline, and I want to quickly take those three layers, and make them into a composition of their own (for the sake of cleaning up my timeline), is there a shortcut for this? I think I've seen a tutorial before where this was done, but I don't have any clue to do that.

Thanks for the great tip, using the 'Pan behind you (y)' tool, to move the anchor point, without changing it's position. Is there anyway to change the anchor point numerically, without changing it's position?

as harlequino mentioned, it sounds like your pixel aspect ratio is off.
when doing stuff for the web in particular, when you create a new composition make sure your pixel aspect ratio is set to "square pixels". you can also change it in your composition settings.
