Book Design (How to quote)

I have been asked to design an A5 book for a small touristy museum in Prague. I need to give a quote but I'm unsure of what I should charge for this type of job. The printing of it is not my responsibility.
A5, 100 pages, 1 colour, 10 illustrations provided (to be used full page to accompany certain sections).
Any ideas where to start with my quote?

Its actually an open deadline but they asked if they could have final artwork by 6th December if possible. I just told them that it was unrealistic.I would be doing it in my free time outside my 9-6 job. I could obviously rush something out but that's not the right way to go about it is it. I'll just try to produce it in the best time possible.

Do you have to do the DTP work as well, or just design the master-pages and let them fill it with text and do the punctuation and everything?
Basicly: how many hours do you think you will need for the project?
Then make a quote based on the hours.
If you have to do the DTP work, make a quote based on the hours needed for the design and add a fixed amount per page for dtp-work.

Both design and artwork. I guess I'll quote separately on the design of the cover and layout, and like 'neverblink' suggested a fixed amount per page. Does 1 set of amends included in the price seem okay or should I just charge for all amends? Clients always say that text is the final copy but it never is, is it!
- its never final - include one set of alts and let them know hourly rate for further alts.Spanna

"aye, don't be so difficult! just drop in the bloody text and pictures and be done with it. i'll pay you 200 tops!"

Yeah, why does everyone think it's that simple.
I did some dirt cheap work for them as it's 'a friend of a friend's' museum and they were on a tight budget due to trying to get the museum exhibits completed. Now that the museum has opened and they've received some good publicity they've managed to get some kind of funding towards the design and production of the book.
They have asked me to give a more realistic quote (not peanuts) this time around but I don't want to scare them with huge sum :-)
