..when you're stressed out of your mind with a huge deadline coming up, and feeling that there is too much to be done in too little time?
How do you get a handle on stress?

I try to just get on with it and chill out after it's done.

I usually go buy a pack of red bull and drink two at a time, it does the trick. However, I ended up staying up two or three days in a row, probably not that healthy. :P

I check if it is at all possible to get done in time, estimate what I gotta do with the time I have left. Scheduling my tasks and getting an overview of what has to be done with each one of them, works well for me. Takes off the stress and makes the job easier.
If it's under no circumstances possible to get done, I see if I can push the deadline. Sometimes that's the best thing to do, though nobody likes it.

When I was a Jr Designer I found myself near to tears a few times because of an ogre boss and ridiculous deadlines.
I think breaking down the project into tasks will help things move along... rather than staring into the abyss and becoming overwhelmed.

for me, it usually turns out the deadlines are false, as belied by the fact that the client fails to deliver items necessary for the completion of the project

Same here. But I never push the deadline unless I absolutely have to. I think I did that maybe once before.
I work much better when there is a lot of pressure on me to get something done quickly. I hate the feeling during the process, but I do have better results in the end compared to taking my time :/

Break your project down into smaller, manageable tasks. Loud music, snacks and dancing around the room...
I sometimes like to wear silly hats and have conversations to myself in a cockney accent. Then I don't feel like I'm the only one in the room with a deadline - my li'l cockney friend 'as one too.
And. Yes. I'm fully aware of the fact that sounds crazy, but it gets me through an all-night deadline. :)

Keep some Mexican wrestling masks in the office. If you are neck deep in it with a colleague, put on your mask and make time for wrestling bouts at 2 hour intervals, great stress relief and build's a special bond with said colleague.
I've found Insanity and silliness the best way to cope with stress, deadlines or pretty much anything evil.
If silliness ain't working, resort to setting something on fire
