ok, found the solution, if it interests anyone
to be able to use "italian" or "french" accents without having to manually set every characters by hand is to convert the document
from
<meta http-equiv="Content-Type" content="text/html; charset=utf-8">to
<meta http-equiv="Content-Type" content="text/html; charset=ISO-8859-1">
