or
use a scan or photography of something real, like paper or some grainy surface. layer on top, make it grayscale and average to about 50% light. set to overlay. put in more of those materials and try lighten and darken methods.

Filter - Pixelate - Mezzotint - Coarse dots
Filter - Artistic - Dry Brush or Palette Knife
Filter - Brush Strokes - Dark StrokesKeep mixing those till you come to the right consistency.

I would also suggest, if its a logo or type make a nice vector version then get a real rubber stamp made, add ink and scan in the best versions and vectorise.
