is there a shopping cart like CMS system (with categories, subcategories, different information sections for a product, etc) out there but without the shopping cart feature? maybe a shopping cart software that i can easily turn off the "add to cart" aspect?

should be pretty easy to take out the add to cart code. Might take a little bit of time/ trial and error, but as long as it's open source, i would say it's pretty easy to do.
