Can anyone recommend a good dedicated server that can handle a lot of traffic? It would also be a plus if they offered site migration services as well.

try textdrive. I think that they will throttle your bandwidth automagically if you need it.

what is considered a lot of traffic? how much space? what are the sysadmin req's? dedicated w/ no root acces, root, root w/ them doing updates.... ?

Once you get up to a reasonable spec server The Planet (formerly EV1 Servers) is one of the cheapest for high traffic. (We get like 2500GB/mth transfer allowance).
I'm looking at Rackspace tho for managed services as Planet only offer unmanaged or semi-managed..
