How do I tell my MacBook to only use the external display and not the one on the computer?
I accomplish this on accident sometimes but can't seem to replicate it on purpose.

It's called clamshell mode:
- detect both displays if needed
- close lid (put mb to sleep)
- wake it up by plugging an usb device in or hitting an external key/mouse btn
- send me a can of campbell's clam chowder (nowhere to be found in Europe)

hit the F7 button. See the two little display lookin icon. That will do it.

use the laptop display for palettes, etc.
never can have too much screen real estate

i've used a dell with the lid closed for a couple years now without issue, but i've heard that since the macbooks get a bit hotter, running it for extended periods with the lid closed can damage the LCD panel. no actual evidence on this, but just a rumor on teh interwebs, so use caution.
