I would enroll in a class at an art school maybe. Like an ongoing education class so you can use their resources as well as learn! Yayy. You live in a great place for print resources and as said previously the best way to learn is to go into the print shop.

i am trying to do the opposite, with no luck... i am majorly web-retarded.
it's like trying to explain "computers" to my grandpa!

yeah, you want to probaly focus on design & typography before you delve too deep into printing processes

adopt a grid system process and stick to it.

first thing to do is look at the "pantone question" here and see the mess of trouble color can cause in "the real world"
there's a little guide called pocket pal; it may be thoroughly out of date, but it does cover some print basics. (lots of extraneous junk in it too.)
but what salisae said . . . it's a very different world

I'm a self taught web designer (professional for the last year) and would like to expand my skills to print.
I'm particularly concerned with learning the technical side - printing processes etc.
Where should I start in order to compensate for my lack of a formal education in this field?
Recommendations of books / courses / approaches etc are appreciated.
Thanks!
