a little butter in the poaching dish helps for the sticking

para - the trick is, first you must catch a horse. once you have the horse in the kitchen let me know and i'll tell you the next step.

kark!
okay, but apart from the butter, i mean, before that stage, what kind of pan is it? cos i've heard that you should use heaps of h2o with a bit o' vinegar in it and then make a vortex by swirling the boiling h20 round with a spoon and then gently plop yon egg into the middle and it swirls around and becomes perfect, BUT
i also have heard that you can use a wee saute or frying pan with only a couple of cms of h20 in it and then kind of rest the egg on top and it steams an that. i imagine the butter trick works on this latter method?
