I always rasterize type in illustrator. go to effect>rasterize.
i use it to comp up websites either to smooth type or emulate hypertext by choosing the options antialiasing "none" or "art optimized".
you can always group element before rasterizing so if you want to revert back you just ungroup them. or - select the text with your text tool copy and paste to a new unrasterized version.

you dont rasterize text in illustrator, it's a vector app.
I presume you mean convert to paths, which in illustrator is 'create outlines', under 'type'.

might possibly need to covert text to outlines first, then do what greedo said.
