As a guitarist I feel obliged to respond to this thread.
Jimmy Page's Stairway to Heaven solo is frequently voted no.1 in guitar magazine polls but is hugely over-rated.
I think the best solos are short and well thought-out. I love Eddie Van Halen's solo in Michael Jackson's 'Beat it' it's short and to the point, as well as being blinding.
The funny thing is that everyone knows that song but most non-guitarists don't know it's him. Plus he never got paid for the recording session.
Other than that, most of the best guitar solos (in my opinion) come from jazz. Since jazz requires a lot more education and knowledge to be able to play it well. Pat Mehteny's solos can be incredible.

actually EVERY SINGLE SOLO HE EVER COMPOSED has something unique about it , massive respect for one of the most underated. The only thing guitar about his ish is the physical instrument itself.
You might argue its technically simple but its like of like the minimalism of guitar lol though when he lays the effects down, down goes your jaw
