When you send something on Outlook at work, if you delete it from you sent items and your deleted items folder can the administrator still see it at a later date?

Yes - Always Shift+Delete, they can still see it, but its a lot harder for them to find it

Highlight the e-mail you want to get rid of, hold down Shift and press delete, then enter, and the mail will disappear into a deep dark cavern of the Exchange Server, which gets emptied every so often (every 2 weeks here). The administrator can only find it if a) he knows what he is looking for and b) you ask him to go find it.

It is illegal for them to read them but not illegal for them to monitor who you send them to, and how many you send. I have been dragged into my directors office and asked to explain 100+ e-mails to my girlfriend in one week?
Couldn't justify them as work related, funnily enough

We can read them from the server via telnet before you know you've even got them too ;)

Yes, Outlook runs on OS X, it is just called Entourage. But Mail (default mail client from Apple) is far far better, simpler and more reliable.
