Can Illustrator perform functionality like Photoshop when it comes to colors?
Mostly I want something similar to Image>Adjustments>Levels...
Replace Color and Channel Mixer would be useful too

well, you can select an object and go to the color pallet. then click on one of the sliders and hold the shift key. then when you slide one, they all slide together to make the color lighter or darker.

I guess to get Photoshop's complex color tools I could open the AI file in there, adjust, then eyedrop the colors back to Illustrator.. but it's kind of a pain.

well, instead of doing that, you can use the eyedropper tool to replace colors without copying the style.
again, select your object, and then use the eyedropper tool on any color you see on screen. BUT make sure you hold down the shift key. that way it copys only that one point of color instead of copying all of the stroke properties and junk!
took me a while to learn taht one and it comes in handy all the time!

Ah, another good one.
Is there a raster format that can be imported into Illustrator that the Eyedropper tool will take colors from? Know what I mean?
There better be or I'm boycotting this prog. :)

using the eyedropper tool and holding the shift key will pick colors out of a bitmap too. very useful little function!
