phtoshop illustrator - default black

Is there any way to control the black in photoshop in CMYK mode. I hate to say I'm doing my first print work since 1999. I'm not happy about it, but I always wondered if there was a way to change that default.

Image>Mode>CMYK
? that converts the whole file.
is that what you are asking?

or are you not wanting your black to be process black, but more of a pure black ink/pigment?

pantone black = pure black when it's printed.
pantone black = the default black in illustrator.
also if your importing illustrator files into photoshop and they seem brighter it's probally cause your cmyk color profile in photoshop is diffrent from the one your using in illustrator.
