Okay, so heres my plan. In the interest of being employed after my schooling, I've decided to first get an AAS degree in server-side programming before attending graphic design courses. Good plan or unnecassarily ambitious?

I'd do what you want to do the most first as you may find that you get led in another direction.

Depends, graphic design is more than the net. If you get a B.A. you could go into print, interface design or enviromental graphics...for example.
But if you plan on staying net only...seems like it would help. Just for the record, I know nothing about programming but still manage to get jobs in the internet realm...

keep in mind graphic design job market is not much better if any than the web market

and keep in mind that most companies employ different people for front and backend. if you want to get a job as a pure web designer, then some knowledge of how the backend stuff works will obviously help, but a degree may be overkill if you're not actually interested in programming.
