the great thing about prosecco is that it's a good choice for mixers. if i were in your position, i'd play up on that aspect of it's pre-existing brand awareness. mimosas, bellinis, etc. posh people don't drink that stuff straight, so if you want to appeal to a posher market, you've gotta play it up like it's mixing cava. bar stock rather than special occasion stuff.
