Tough one. I grew up in the Burgh and used to go up to the Royal Mile / Princes Street every year for the midnight celebrations. Kind of got pissed off with it after a while, but if you've never been I totally suggest it.
I would say take in the bells at midnight standing at the top of the Mound (you'll need tickets to enter the street) and then make sure you have tickets to head to an event afterwards...
