    Really cheap solutions for both of your questions.
    For vinyl to computer transfer you can use CD spin doctor. It's a small program that comes with Toast titanium (cost 80$). It's not as sophisticated as other programs that do that kind of stuff but most of the times it's quite good.And you will probably have it already because it's like the only cd recording tool for the mac. It has a really simple interface and you can remove hissing and scratching quite easily. If you own toast titanium give it a try.
    Now for the pitch changing tool. There's a REALLY good utility called amazing slow downer (cost 40$). It can take a variety of file formats including mp3's and you can change the speed of the file without changing the pitch. The results are amazing. And of course you can change the pitch and the speed of the song.
