Stick to the coast. Start by visiting Pula and spend a day in Kap Kamenjak, Premantura (The nature reserve..).

Opatija is very nice and has excellent but expensive hotels with great wellness offerings. Drive south to Zadar for a day and plan some time for Dubrovnik.

Don't eat Cevapcici with fries all day. Look for small fish restaurants with today's catch. Isands Krk, Pag or Rab are not so cool imo. Only more expensive and time consuming ferries.

If you can, go by car or motorcycle and drive the coast road. Terrific views... I recommend camping, Croatia has the best campsites in South Europe. Clean, cheap and free from all the family business like in Italy. Take a camping hammock, they have pine trees everywhere to hang it :-)

I'll be there again from June, 23rd until July, 8th touring from Germany to Montenegro an back :-)
