    After reading this thread I went to the grocery store and got ingredients to turn this leftover rice into really good breakfast fried rice. Totally vegan, with zucchini, carrots, garlic, ginger, scallions and all kinds of good flavor. I highly recommend it.

    Tonight I'm making grilled salmon over a (vegan) quinoa that I'm preparing with cucumbers, onions, tomatoes and peppers, as well as parsley, mint and a light lemon dressing. Oh yeah.

    • Nice - sounds great. Keep reading advice to avoid eating large quantities of quinoa though - it's good in moderation but can cause nasty stomach issues.fadein11

    • As you are from UK thought you may know of it - absolute stone cold classic comedy film from way back - Mike Leigh. The main character is v.much a quinoa type.fadein11
    • I've never made quinoa before, but I do order it regularly at this one place. I love the stuff, but probably only eat it 3-4x/monthmonospaced
