    All my vegan recommendations definitely contain onions and carbs. But I'm sure there are other things you can sautee or slow-cook and bring to work to microwave.

    - Thai/Vietnamese dishes might meet some of your requirements.
    - Qunioa, bean, or chickpea salads containing the ingredients of your choosing could be good
    - Vegan Sandwiches on wraps, flatbread or sprouted bread might lower your carb count, and you could put whatever you want on them. Vegan meats and cheeses abound at health food stores.
