I am currently roasting a whole chicken, marinated peruvian style, like those amazing restaurants I love in NYC do. Even made that addictive, spicy, light green sauce to go with it. Gonna eat so good tonight. MMM!

    • This reminds me I really need to fix my oven... haven got it to work since a raccoon lived in there for several months.pango
    • Kidding about the raccoon. But oven is still broken. And I do have a cat regularly breaks into my place...pango

    • Restaurant like Tio Pio or Pio Pio. Recipe here http://www.foodnetwo…monospaced
    • This is the sauce. Mostly jalapeños, cilantro and garlic with a hit of mayo. I used less and the light stuff and it's great. http://www.seriousea…monospaced

    • I didn't use any cheese either because that made no sense. I added lots more garlic and jalapeños too. I like it spicy.monospaced

    • I doubt that Peruvians would use jalapenos in any recipe. Adding cheese does make sense to me though.ORAZAL
    • But if you've found a recipe you like there's no need change it.ORAZAL
    • You doubt Peruvians would use jalapeños? Why?monospaced
    • Of course they do. I got this from Peruvian friends. What is your problem. They told me not to use cheese and they have been making it for generationsmonospaced
    • What is my problem? I am Peruvian you fool. We don't have jalapeños in Peru.
      For generations, LOL.

    • Well, the peruvians in nyc use them. Maybe because they don't have access to the similar green chili in peru. BTW, I wasn't lying when I said my source was legimonospaced
    • Cooking is a serious passion for me, and I looked into this. I know it can't be 100% authentic, but I do know it is exactly what's served at Peruvian joints.monospaced
    • I am going to Peru next week for an event I've been designing for months. I've been there several times since the summer started too. They had jalapeños.monospaced
    • I take back what I said then.ORAZAL
    • The dish was amazing and I highly recommend trying it out if you want to have an amazing meal. 24 hour brining is worth the wait.monospaced
