    Depends on the product completely.

    If there's zero benefit to the user to have an account, then "Free Access" all the way. Gather your data in a different method

    If there's any benefit for the user to have an account - STored history of browsed products, recommended articles based on things you've "liked", social interaction, valuable repeat contact etc, then have Sign Up.

    Lots of web stores these days give free access to shopping and have "signup on checkout" and "one-time checkout" options. The majority of users choose signup as there's convenience in any potential return visit.
