    I'd really recomment giving Ableton Live (or Bitwig) with their Session views a go. It's great for jamming with your "lego blocks".
    And you don't have to bounce stuff down, you can leave synths as synths so their parameters can be tweaked real-time as you jam and record as you go along with recording the parameters of effects/volumes etc
