I was at the EMP a few years back. Could be different now, but we found it sort of underwhelming. If you have kids, though, they'd likely get a kick out of the interactive aspects of the exhibits.
Personally, I just like casually walking around Seattle. There are a lot of neat little spots you stumble upon. One short trip from the city that's worth making time for is Freemont. There are some nice cafes, book stores, and other weird little shops (as well as the Freemont troll).
And do try check out the piroshki shop in Pike Place Market. (Greasy goodness.)
