You have the Ottomans to blame more than the Europeans. The Ottomans conquered the major water ways and roads to thee East during that time as well as destroyed them through Istanbul and Balkans which blocked the Euros from India.
The euros did what anyone would have done, they looked for a faster route to India. After all everyone likes flavor in their food.
Columbus didn't "conquer" the Americas. The Spanish and Cortez did however.
Everyone gives Columbus such a hard time leave him alone.
