  As a resident I would say Mother's is overrated and not worth waiting in the line out of the door. bliznutty had some great suggestions. Charbroiled oysters at Drago's is a must. You can find Drago's at the Hilton downtown by Harrah's. A great dive bar/restaurant with one of the best burgers in town is Port of Call. Back of the quarter on Esplanade.

  jacque imo's is awesome, but prepare for a wait. worth it though.

  try Frenchman street. some great bars and music scene. it's in the marigny which is behind the French Quarter, across Esplanade Avenue.
