    ID doesn't have grayscale color management—placed grayscale files are color managed via the document's CMYK profile when Overprint Preview is turned on or when Proof Colors is turned on with Proof Setup set to Document CMYK. So, with Overprint turned on you are previewing how the grayscale will look on the black plate of a press printing to the profile you are using, (or the doc's CMYK profile).
    The best way to get a preview match between ID and PS would be to set Coated Fogra27 as your grayscale profile in Photoshop. Color Settings>Working Spaces>Gray>Load Gray... choose Coated Fogra27 fro your profiles folder. You have to have More Option selected in Color Setting in order to have access to Load Gray.
