Those big sites are benefiting from SEO. If you search for "Apple computer," what comes up (beside Apple)? Probably Amazon and Wikipedia and other popular sites. Combination of high page rank, content relevancy and most important millions of people linking to them because of their existing popularity.
Now imagine some mom and pop store that sells Apple computer parts. They don't have the links, page rank or the brand name. They will probably never rank for "Apple computer" so maybe they target more long tail keywords like "Apple 27" Cinema Display." Their SEO person might suggest titling their product pages to match the terms they want to rank for, or use link building to build the popularity.
