Varnish soaks in to a greater or lesser degree, a Spot UV sits proud of the stock surface.
Each requires a different approach if sealing or applying a laminate.
Spot UV is generally colour neutral whereas a varnish will always have a slight hue to it, and will yellow a little over time.
I can't remember but I think part of the massive difference in price might be because the varnish can be done in-line whereas the spot UV has to be applied after ink has dried.
