Charge per image. Charge enough that will cover your time for 2 rounds of revisions at most, then charge additional for more revisions. Most books don't need more than one round of revisions.
$1000 is only $100 per image, which isn't very good. I don't know the complexity of the images, but my advice would be to charge no lower than $250 for any image that is going in a book, unless it is a tiny spot illo.
They want a full buy-out? Are they using these illos for things other than the book? Full buy-out is usually 100%-200% above what you would normally charge for the illos.
