My wife has a gluten sensitivity, though at the time it came to light there was no blood test (which i hear there is now), so it was a diagnosis of exclusion, but also related in part to her fibromyalgia.
She did the same thing you did; quit for a while, said "fuck it" and then ate a hot dog roll and paid for it.
She REALLy misses gluten and is thinking of trying to slowly re-introduce it to see if she really is senstitive, plus you need to have been eating gluten for the blood test to show anything, i guess.Lots of foods are going gluten-free with little or no detriment to their taste. My wife misses pastries and bread, as we have a hard time finding recipes and mixes that don't taste funky for those things. But we use buckwheat flour for pancakes and Corn Chex, ground up, for breadcrumbs, etc
