50% upfront. large projects 30/30/30/10.
Nowadays I put "payment due on receipt", although no one really pays attention to that. I've never bothered with interest, the people that haven't paid are the ones that went bankrupt, in which case I was very, very, very lucky our lawyer could get 50% a year later (and it was a sizable amount).
Might change to 60/30/10, or something that limits that second half risk.
