yeah, its tough to get her ring size without giving away your plan. Does she have a sister or best friend you can ask? if they don't know, maybe they can find out without making it seem obvious.
I was in the same situation when I was getting ready to propose. I wasn't very subtle. I was more like 'hey, whats your ring size?' We had already been talking about getting married in the past so I didn't exactly ruin the surprise.
the real surprise will be the ring you choose. I worked with a friend of mine who is a jewelry designer and came up with an original design that had significance to my wife, so while I didn't surprise her about getting a ring, I did surprise her with what the ring looked like.
