emukid, that video doesn't tell you whole truth. for once it had custom color profiles generated that removes all the red color from the image and it's the red channel on those Canon cameras that introduce huge amount of noise.
Here is my hands on experience with Canon 5D MII, there is an image that was hot at ISO1600 that shows a huge amount of noise in the reddish areas:
