If you want to design something nice, why accept limits, or Microsoft?
I'm not sure why you can't use whatever you want.
If you are worried about some non-designer on the other end, how about setting up a Flash movie where they can type in whatever fields you want to have access to and put it on a #p frame and let them print that. I think Fax software works as a print function with the printer description controlling it. Am I wrong.
