I have had success in these regards.
I have a document/ bill that states the work up front.
I do not undersell myself. if the job is 6 hours, and you have issues and it takes 18 hours... you really hurt yourself.
Find out what is fair for you to do the job, it's that simple. When you hand over the document that states exactly what you want to do, the client will tell you if thats what they want or not, if it isn't what they want, work to getting to understand exactly what they want. And re-write the bill. =)
