    "Like rabbits, squirrels should be paunched as soon as possible after killing. They can then be hung for up to four days in cool weather, although this isn't really necessary, especially with younger animals. Skinning is as for a rabbit, only harder!.... All the good meat on a squirrel is on the back legs, or haunches. There is also a bit of worthwhile meat on the saddle. The best way to joint them is therefore to cut a skinned squirrel in two, just below the front legs. The two haunches, still joined together with the saddle attached, make a great one person portion. Or they can be separated to make smaller portions for a casserole. The front third...can be discarded, but is worth keeping for stock. Roast the pieces briefly before putting them in a stockpot with vegetables and herbs."
